What meat with butternut squash risotto?

I have guests for dinner on Saturday, one veggie but two others who won't consider it a proper meal unless there's meat. I really don't want to do two separate meals so was thinking butternut squash and gorgonzola risotto (I make a mean risotto) with something meaty on the side. Any ideas?

Dunno if this helps, but I usually stir fry chunks of chicken breast and dump into my roasted butternut squash risotto (for DH who thinks it needs meat).

What about grilling some nice pork chops? Not too much extra work!

chorizo sausage is luch in risotto, but maybe not with the gorgonzola!

What about a 'meaty' fish like monkfish?

Alternatively, buy some quorn (their mince substitute is good, as are their chicken pieces, tho some of their varieties are really urgh), and then the veg will be happy, and the non veg will also be ok with it (i'm a veg and do this often; even the manly blokes usually like the quorn; particularly if i use the mince and make a flavoursome chilli or something like that). Wouldn't recommend soy mince or those others, as they just don't cut the mustard for meat eaters (or for me, for that matter!).

Something bacon-y like gammon would go well... but then I always put lardons in my butternut squash risotto.

Of course, you don't have to provide meat for the meat eaters, it's up to you!

Hmm. so something generally piggy seems to get the popular vote. What about pork escalopes? Bashed thin, covered in breadcrumbs and sage and fried?

tbh it would squash and blue cheese risotto is lovely - but very rich and much much nicer without meat, so maybe you do a wild mushroom risotto instead? or tell the carnivores to open their minds (and let them have parma ham to begin)

Fry some sliced bacon or pancetta until crisp and put artfully on top, yum

Even my DH will countenance risotto without meat! But if you feel you must I would roast a chicken or some chicken pieces.

I'd do lamb steaks. Mostly because I love lamb steaks, though - not any greatly thought through menu planning!

(I know they're dear, but your risotto will be cheap as, er, chips..)
