pheasant : how do I cook?

I've been given 3 small pheasants. I've never cooked them before. What to cook that the DCs (8 and 10) will eat as well please?

I've always roasted them, using the same timings and temps as I would do for chicken. They are delicious with bread sauce, bacon rolls and chipolatas if you do roast them, and your DCs may eat a roast?

You could cut the breasts off and saute with onion apple sage and a splash of white wine or cider and cream. My kids love that.
