We're away at the end of the week and I need to use up the following - I'm sure there is something I can make but my mind is blank!!

I have:

Bacon
Carrots
Double Cream
Celery
Parsley
A red chilli

Also have frozen haddock but that's not a necessary item

Any ideas would be most welcome!

Are these the ONLY ingredients in your house? Or just ones needing to be used up?

I'd do S=smoked haddock soup or smoked haddock pie. For the soup you can use the carrot and celery, the bacon and a spud or two, and add the cream and parsley at the end.

For the pie, put pastry or mashed spud on top, serve with the carrots?

Not sure chilli goes with smoked haddock.

You could make chocolate and chilli ice-cream with the cream and chilli? Have you any choc?

Nope I have a few other bits but these are the ones which won't last till we get back.

Soup sounds like a good option - do I just cook everything & blend? Can buy a couple of spuds if necessary...

use lentils or chickpeas if you don't have potatos for the soup - very tasty. I'm a soup blender, not a chunker, but its all about personal taste.

For the smoked haddock soup, def don't blend, you need big chunks of fish in there. I wouldn't bother buying spuds to put into soup - just pad out with prodigious quantities of croutons on top.

Bacon in soup doesn't blend well either.

You could do spicy carrot and coriander soup and this recipe uses cream as well...
So just have the bacon in a sarnie!

risotto?
sweat carrots and celery and bacon, add rice and stir fry until translucent, cover with stock until absorbed then add a dash of cream + sprinkle fresh parsley.

haddock chowder sounds fab, you can add de-seeded chopped red chili for a quick
And you can freeze it too for a ready meal when you return.
