Anyone got a lovely recipe for Irish Stew please?

Nothing doing in any of my recipe books and I suddenly have a yearning. I've never made it before so would welcome a recommendation.

I use this one,though I add a few cloves of garlic too but then I put garlic in everything.

Oh thanks LTBR! Looks nice but suspiciously heavy on the onions. I will have a bash at it but am not going to do 5 cooking onions plus 3 spring onions - that seems mad! I'm so glad its got pearl barley in it, that's the key ingredient I remember from when my Nan used to make it.

I just use recipes as a guideline and adjust to taste. I love onions, can't get enough of them so it suits me but obviously you can alter it as necessary.

And you certainly can't have Irish stew without pearl barley.
