Any ideas for leftover curry?

Made some squash, carrot and red lentil curry in the slow cooker the other night and seem to have masses of it (far more than the amount that went into it!). DH liked it but isn't particularly excited about seeing it again, but I don't want to throw it away. Any suggestions?

If no one has any better ideas, I thought I might fry it in a bubble & squeak style and serve on cubed roasted potatoes and under some sliced fried halloumi (DH loves both potatoes and halloumi, so these may distract him from the curry take two in the middle ). Or does that sound disgusting?

Can you freeze it and have it another time?

JaneiteIsTrite · 03/01/2010 22:15

Blend it with some stock to make soup?

displayuntiltwelfthnight · 03/01/2010 22:16

put it in a pastry shell to make a pastie?

I was going to suggest potato and cheese, but as a baked pot and filling, maybe some creme fraiche.
Sometimes we have leftover curry (hot) on pitta breads with plenty of salad. It's nice.

Fluffy that was DH's suggestion, but in our household it translates roughly into "fling it into the void and never see it again". Also I am not sure whether lentils will freeze (apparently beans don't freeze well, though never had a problem personally).

Soup is a possibility (have found most veggie meals make good soups!). Would curry go with garlic bread? This would also distract him. Not sure pastry would be sufficiently distracting unfortunately (I did offer to cover it in mashed potato and call it a lentil bake, he was having none of it).

Oops sorry, forgot my namechecks! Thank you for the replies.

Wuk x-posted. Baked potatoes is a good plan. He does love his potatoes

Could you make it into a veg biryani

tethersend · 03/01/2010 22:23

Add some flour and a beaten egg and make spicy lentil burgers.

fishie · 03/01/2010 22:24

croquettes. make a roux with equal proportions of butter flour and liquid, add your curry. chill it for a little while then make in to weeny patties, egg and breadcrumb, fry and DIVINE.

JaneiteIsTrite · 03/01/2010 22:28

Lentils freeze fine ime.

DitaVonCheese · 03/01/2010 22:50

Ooh, croquettes might work, poss with halloumi on top (cheese is my reward for having to eat veggie ).

Thank you for your many good ideas for thrifty use of leftovers late at night! I am imagining you all typing in your pinnies

Now I am imagining army of be-pinnied MNers with hair in curlers and big hammy forearms.

JaneiteIsTrite · 03/01/2010 22:55

My forearms are most certainly not hammy.

Of course, if you really want cheese it should be paneer - yum yum.

BertieBotts · 03/01/2010 22:55

Byriani is good. Jamie oliver has a good recipe for it in his ministry of food recipe - get someone who has a copy to type it up?

WukThisItsXmas · 03/01/2010 22:58

You don't deny the pinny or the haircurlers, I notice, Janeite.

Sorry, DitaVonCheese, I am derailing your thread.
