Most Pleased With My Slow Cooker Chicken Stock

I am feeling most frugal and quite smug
This morning I threw a chicken carcass in the slow cooker, with a couple of tired looking mushrooms and a knob of shrivelled ginger from the fridge, plus the onion, garlic and lemon wedges I'd roasted the chicken with. Covered it all with water, put the slow cooker on and that's it.

Tis bloody lovely - am going to use it to make some chicken noodle soup. I had it in my head that stock making is terribly faffy but clearly it doesn't have to be. Anyhoo, thought I'd share.

I wish I had seen this before I threw away the turkey carcass. It would have been great!

It would have been better if I'd put a fresh onion in it, and a carrot and some celery I reckon. But the cupboard was bare.

Read later in Valentine Warner's book that you should leave lemon out because it makes the stock bitter, but it doesn't seem to have hurt (it was only half a lemon anyway).

I've put it all in the freezer - think I'm going to cook up some brown lentil soup with it instead of the noodles.
