How do you get roasted vegetables to go crispy

My parsnips are alright, but sweet potatoes always just go squishy and greesy, aubegines go the same way.

So is there a knack to getting them crispy and what other veg is nice roasted.

Surely aubergine should be at least a bit squishy?

make sure the baking tray is very low-sided as this stops the moisture from the veg from steaming them a bit, IYSWIM.

I put oil and a little bit of salt over them - they seem to go crispy! Just a very little bit of oil though.

too much oil can make them go squidgy too so you've got to get balance right
