Carrot & ginger - chop carrots, soften in butter. Add veg stock & simmer until carrots cooked right through. Add a pinch of ginger to taste the leave to cool. Blend until smooth, reheat & serve with a swirl of cream.

Fresh ginger is nicer - about a half inch piece should be plenty - but dried is fine too

I love butternut squash but haven't got one. so far, all the recipes I want to make I am missing ingredients and are snowed in.

This is my fave - Brocolli and Stilton.

-fry onions/shallots in butter.
-add a sprinke of flour
-add chicken/veg stock.
-add chopped up brocolli bits and cook for 5 mins
-crubmle in a load of stilton
-lots of pepper (not so much salt, stilton quite salty).
-liquidise in batches (do not try to liquidise large amount of hot soup like dd did last week, cupboards get decorated in soup and dd ran in shrieking)

I would like that too but DH doesn't like broccoli and I have no stilton.

At this rate it will be a pan of frozen veg and some stock simmering.

Have you got spuds, onions and spices? If so you can make bombay potato soup:

-Fry onion in oil for 15 mins until golden brown
-mash up 3 garlic cloves and a thumb of ginger in pestle (or blender if you can be bothered with scrapingh it all out) and add to onion
-add heaped teaspoon of following: turmeric, ground cumin, ground coriander, cayenne or chilli powder, ground cinammon (or a cinnamon stick in with onions from start if you have one)
-add tin of chopped tomatoes
-add lots of chopped up potatoes
-cover with chicken stock and season
-when potatoes are soft liquidise half of soup and stir back in.

Yum.

You can probably do the above without the onion and garlic, however will taste lesspungent and curry like. Also if you have no spuds the frozen veg will do, in that case I would liquidise the lot.

No onions as I stuck to my shopping list/meal plan for once.

Having to rethink I think. DH has made fresh bread so something to go with or use that would be good.

Damn snow.

Have you got a ratty old bottle of Chritsmas kirsch kicking round? Just thinking that as you have some cheese you could make a fondue and dip the veg and bread in.

Cheese on toast it is at this rate.
