white chocolate and cranberry cookie recipe

these are really easy, lovely and brilliant for presents - don't scrimp on the white chocolate though as thats what really makes it - Tesco now doing white cooking chocolate for 97p which is brilliant!

100g/4oz softened butter
100g/4oz golden caster sugar
1 egg (beaten)
1tsp vanilla essence
175g/6oz plain flour
1/4 tsp salt
150g/5oz white chocolate cut into small chunks
75g/3oz dried cranberries

oven to 180

beat together butter & sugar
add in egg and vanilla and beat together
in seperate bowl mix seived flour/baking powder/salt and then add to butter/egg mix and blend (use a metal spoon for this part)
mix in white choc chunks and cranberries

walnut sized balls of dough onto lined baking sheet (spaced well apart to allow to spread) and bake for approx 12minutes

allow to cool for a few moments before putting them on a wire rack

I made some the other day and they were so easy to do and very very nice. I made mine in paper cases to stop them sticking to the baking tray.

DS's didn't stick to the tray (could have been the 1/2 pound of butter he used for greasing!)

have once again made a tonne of these and handed them out as presents to neighbours etc glad you liked them
