A good stuffing for pork

Am serving roasted pork loin on Boxing Day and looking for a good stuffing. Any recommendations? Ta!

Jamie Oliver does a nice herby one - google it? Sorry, haven't got recipe anymore, but I made it once (involves lots of rosemary and some white bread) and it was yum.

Was it this one? If so could you tell me if the bread is toasted (looks like that in the pic). Unfortunately it doesn't include the method.

Another idea - for pork loin I usually do a sage and apple stuffing:

Chopped onion and garlic, slightly sweated in a pan with oil
Add contents of 1-2 good quality pork sausages (just squeeze it out)
Remove from heat and add breadcrumbs, chopped fresh sage, and an apple chopped up into very small pieces
Season with S+P
Moisten a little with either stock or apple juice (if you like the apple-y taste)
Stuff some into loin, tie with string
I usually put the bulk of the stuffing in a separate dish covered with foil

If you really like apple with pork (can you tell I do?) then you can add some thick slices of apple to the roasting pan about 20 mins before the end along with a decent splash of apple juice which will contribute to the gravy flavour.

Ponymum, do you use ordinary eating apples? Just got back from tesco and they were all out of bramley.
