Husband is making stollen cake (bless him) as we speak. He needs 40g of fresh yeast. He only sachets of dried yeast - each sachet us 7g and it says each sachet = 2 teaspoons.

how much dried yeast = 40g fresh yeast?

on my packet of fast action dries yeast it says one sachet is equal to 15g of fresh yeast or 7g of ordinary dried yeast.

I have always used 1/2 the amount of dry yeast to fresh also you need to adjust the amount of liquid you use i.e. if you use 100ml to activate fresh yeast and another 200ml in the recipe remember to use the 100ml too or your dough will be too dry.
