My ds has never knowingly consumed a vegetable in his life. He likes spaghetti sauce, but you can only serve it so many times a week.

He has a sweet tooth and likes cake, especially chocolate. I have done carrot cake and banana bread. I remember seeing in a magazine (Junior I think) a recipe for chocolate cake with grated courgettes in it but I have lost the magazine. Does anyone have the recipe or any other cake receipes with concealed fruit and veg?

Nigella does a great courgette cake. I'll post the recipe tonight if nobody beats me to it.

sorry can't help on the cake front but "green cheese" sauce (cheese sauce with cooked spinach whizzed in - think it came from Annabel Carmel originally) goes down a treat with pasta / fish/ in lasagne in our house, hth

Courgette cake

250g courgettes, coarsley grated (weigh before grating)
2 lge eggs
125ml veg oil
150g caster sugar
225g self raising flour
1/2 tsp bicarb
1/2 tsp baking powder

Eggs, oil and sugar in abowl and cream. Seive in flour, bicarb and baking powder continuing to beat. Stir in courgette. Pour (it's quite loose) into 2x21cm tins and bake @ 180 for 30 mins until firm to touch.

Fill and cover with lime/lemon curd, or cream cheese frosting
