Leftover roast chicken? Please inspire me!

Anything but curry!!! What do you do with yours?

I do quesadillas with some peppers, jalapenos, and cheese, guacamole and salad.

Pasta bake with leeks white sauce maybe a bit of bacon to stretch the chicken. Cheese on top.

Chicken and Ham pie but I use left over cooked chicken rather than the breasts in this recipe.
For extra smug points I use the frozen stock from the last time we had roast chicken.

risotto - which I love but the dcs object to.

Make up some chinese-ish marinade with soy sauce, honey, chilli, ginger, lime juice etc and put the sliced chicken in it. Fry chunks of chicken in a hot pan until slightly crisp and brown and serve with rice or noodles and steamed pak choi or cabbage.

Will make up for it but suggesting my own...
Fry chunks of left over chicken with some strips of bacon till crispy, add a couple of large spoonfulls of Pesto and a small tub of Cremem Fraiche and warm through. Serve over pasta.

My DH hates Pesto and even he loves this.

You can also add mushrooms while frying the bacon if you like...

I tear the chicken into strips and heat in a pan with a few tablespoons of mango chutney and serve with couscous (mixed with sauteed onion, a handful of raisins and some wilted spinach).
