ONIONS!

Sainsburys have delivered my order, and instead of 1 red onion, I've been given 27! Why I don' t know but I loathe waste (hence ordering 1 onion when I know tis all I will need).
Can anyone suggest some good onion recipes, freezable ones would be good!

They also gave me nearly 20 carrots when I asked for 3 so if your onion suggestions include carrots I'll be doubly grateful.

Make this [[http://www.bbcgoodfood.com/recipes/1404/red-onion-marmalade red onion marmelade]. It's delicious! I should think 27 onions should just about do it !

PS don't put carrots in the marmelade. Think that might spoil it .

Oh, sorry about the link - trying again red onion marmelade

You want onionrecipes.org, though they all look a bit complicated.

Try this - it'sa version from memory of one of our Christmas accompaniments last year.

Preheat oven to 180. Take about 8 - 10 red onions. Peel outer layer off and cut in half. Drizzle some ordinary veg oil over the bottom of a large flat ovenproof dish. Arrange cut side down in a single layer in an ovenproof dish. If you are roasting some meat, add a spoonful or two of the meat juices to the pan. Cover with foil, maybe. Bake at 180 for something like 45 mins - 1 hour. Amazing with a roast, hot, cold, in sandwiches - you name it.

Wow thanks both of you. The marmelade would make good xmas gifts, and Choosys roast onions will be good as I'm hosting xmas day this year. Both the websites have been added to my favorites list!

Oh, just thought of another one - if you have Nigella's Domestic Goddess there's a delicious recipe called Supper Onion Pie, which is a kind of savoury tarte tatin, with onions as the apples, and a scone base as the pastry. If you see what I mean.

Quite quick to make and yummy. We have it quite regularly.

Here's the recipe

On the marmelade - great minds - I actually got the link from a Mumsnet thread about homemade Christmas gifts!
