Jam and marmalade question

sweetnitanitro · 11/12/2009 15:02

I've got some recipes for jam and marmalade but they don't specify what kind of sugar to use. Any tips for which is best? Does it make any difference?

Thanks in advance!

Depends on what type of fruit you´re using for the jam. Some have plenty of pectin in ordinary sugar is fine, but for others you´d be better off with jam sugar to get a better set.

For marmalade normal sugar should be ok.

I´d guess that if a recipe doesn´t specify jam sugar, ordinary is fine.

I'm a jam rookie the jam recipe I have is for blackberry jam and it says to add extra pectin so I guess normal sugar will be OK?
