Any ideas for christmassy beef?

Got a joint of beef in the fridge for dinner tonight but I wanted to give it a bit of christmas flavour as me and DS are doing all sorts of christmassy activities this afternoon.

If it's a really good piece of meat, I wouldn't mess with it.

Maybe you could make a 'Christmassy gravy' or sauce to have with it, instead?

Maple syrup or honeyed parnsips, garlic roast potatoes, yorkshire puds (stir a bit of English mustard into the batter for a bit of kick), braised red cabbage with apple or any roasted root veg ( a mix of desiree potatoes, swede, carrot, squash and red onion good) - all nice and wintery.

Sorry that's what I meant. A christmassy sauce or rub to put on it.
