Anyone have a good champagne truffle recipe?

We've got a bottle of cava which I'd like to use up.
Have tried googling and Mnet recipe search, but can't seem to find anything.

Can anyone help?

Paraphrased!

1 lb Chocolate (I used Tesco value plain)
8 oz whipping cream
1 tbsp unsalted butter, softened
1 tbsp vanilla extract

Cocoa Powder for coating

Chop choc
Heat cream in bain marie (or heatproof bowl over saucepan!) until warmed through. Add choc and whisk until melted and mix is smooth.
Remove from heat and blend in butter, then vanilla extract, then 3 tbsps champagne.
Cover and chill ? it says a few hours, I did mine overnight.
When hard enough to handle get teaspoon sized chunks, roll into balls using hands ? warmth will soften it and make the cocoa powder coating stick.
Chill again for half an hour or so. Best kept chilled and removed about an hour or so before consumption.
Makes about 2 dozen

Erm, mine didn't last very long! I guess if you keep them chilled then you could do them now for Christmas?

They do freeze, apparently, but I don't see the point in that.

A friend has just emailed me a recipe using condensed milk, and these ones apparently last 6 months ???!!!

When I said they didn't last I meant they got eaten!

I don't know how long they're supposed to last.
