making ahead/freezing stuffing for Christmas help!

I watched Delia the other night, have just bought a stack of sausagemeat to make stuffing, and was all set to make it, cook it, then freeze it then realised that I will actually need it to stuff the turkey. So. Do I freeze the sausagemeat now, defrost it on Christmas Eve and make the stuffing then? Or do I mix the ingredients (sage etc) in with the sausagemeat and freeze it uncooked? How long should I allow to defrost it? Help please!!!

You don't need to stuff the turkey-I think it's called stuffing if you do and dressing if you don't. We do both because of dietary restrictions. I think you could cook and freeze now or mix and freeze for later but I don't know if one or either would be soggy-that would be my concern or does this not involve bread?
