flavoured oils arrgh!

Wanted to do flavoured oils for xmas prezzies but i would need to give one next week (wouldnt be used until after new years as there away) and give one a couple of days before xmas

Havent had a chance to do them and am panicing

Have i left it to late??

No. Chilli, garlic and basil each only take two weeks minimum. If you put peppercorns in they do take a bit longer though. You can accelerate the process by bruising the thing you are flavouring with before putting it in the oil.

Apparently Garlic or lemon can cause botulism! true??

Dont want to poison the parents of the kids i look after...wont look good on my CV

Does Caper and anchovy oil sound vile?
