Gluten free and low cholesterol food needed - help!

We usually do a hamper-type pressie for the in-laws at Christmas. MIL is gluten free, which isn't a problem, but now she's been told she has high cholesterol as well, and everything needs to be fat free (or so low as to be non-existent). DH and I just scoff anything going, so don't have much know-how for low-cholesterol food.

So, does anyone have any bright ideas for what we can give MIL in the hamper? The usual staples of chocolates and nuts (apparently they're high fat?!) are out

These chocs are gf and low cholesterol, plus if they are like anything else that Booja Booja make, they'll be totally delicious too. You can search DS for gf or low cholesterol (but not both annoyingly), and everything is labelled.

Things like candied fruit would be good too
