Does anybody have a foolproof recipe for pastry that is wheat, gluten & dairy free?

If I google it, there's plenty of recipes, I just wondered if anyone had prior experience of which one works well, and whether there were any top tips for working with this sort of pastry.

(I want to make some mince pies for a colleague rather than a family member, hence why I don't know anything about it)

you can buy gf pastry in Sainsburys. Thats what I do anyway!

M&S make very good gluten free mince pies if you cannot be bothered to make them or just need a few.

The DS frozen gf pastry has whey powder in it

Mrs Crimbles do a gf pastry mix which is pretty good and does not contain dairy
