What can I make in advance and freeze?I have lots for xmas and yesterday made soup which my family insist
on every year and the gravy.What else is ok If I par roasted the parsnips and carrots would they be ok? And stuffing and little sausages?Thanks xx

Don't part roast.

Blanche the parsnips in boiling water for 2 minutes. Drain, then immediately plunge into a bowl of iced water to cool. Drain again and dry on kitchen paper.
Place in polythene bags. Remove the air and seal.
Cook from frozen in boiling, lightly salted water for about 8 minutes until tender. Or, thaw at room temp for 2-3 hours or blanch in boiling water for 2-3 minutes then roast in the oven in the usual way.

Carrots - do the same as for the parsnips but cook in the boiling water for 3 minutes.
Cook from frozen for about 5 minutes in boiling water. Or use from frozen in soups, casseroles or stews.

Thanks I think I will do those! I want to get the annoying bits at least half done tbh.
