Can you do baked alaska in advance?

We're having a big family bbq and I thought I'd do baked alaska, but am I right in thinking you'd have to excuse yourself, whip up the meringe, frost and bake immediately before serving?

You could prepare the meringue before, but you are right that you would have to excuse yourself to assemble. It only takes a few minutes though, and it goes into a super-hot oven (or you can blowtorch it).

I've done it before for a big gathering and so long as you have everything ready only takes a few minutes to assemble.

Have the cake base ready on a baking tray, ice cream in the freezer molded into shape, and the egg whites in a bowl with the electric whisk at the ready and the sugar measured in a bowl. Stick the oven on when you sit down for you main to ensure it's hot by the time you need it.

Should just take a few minutes to plonk the ice cream on the sponge base, whip up the egg whites for the meringue and assemble. And then just whack it in the oven.
