Every Christmas I make this recipe - a gorgeous cranberry and red onion marmalade. I normally do it 2 days beforehand but I'm wondering if I could do it now if I put it into sterilised jars and vacuum sealed it. It doesn't have much sugar or vinegar to act as a preserving agent, but maybe you keep anything in a jar for several weeks if it's sterilised and sealed?
Any ideas? I have a spare hour today and really want to make it now Thanks!
