I need to provide cakes etc for afternoon tea for lots (18 ish) for the day after Boxing Day. This comes after cooking for not quite so many (only 11-14!) for Christmas Eve, Christmas Day and Boxing Day

So I think I need to do as much of the baking for the Sunday as possible in advance. I never normally freeze cakes is not sure how this is going to work out!

Do fairy cakes, scones, Chelsea buns etc freeze ok? I'm assuming I should ice the buns afer they've defrosted rather than before they go in...

Any tips?

thanks
