A chicken poxy dd and I just set out to make biscuits and I realised i have no eggs, and can't go out to get any. Any suggestions for baking without?

Short bread.

If you've already started, just miss out the egg, and the biscuits will come out crispier, but fine. (I think )

yup short bread

I made some yesterday

thank you. i just read somewhere you can substitute banana for egg, but with sugar too that might be just too sweet. trouble is, i've now peeled the banana too! what a baking disaster i'm about to have! could it work to do just flour and banana?

I was doing some the other day and I had exactly the same problem - so I just left it out and added a little extra milk to help it stick.
Biscuits were fine - a little less light and risen than they might otherwise have been but fine.

never mind the nana shortbread here we come. thanks!

Was just about to add a thread as I have the same problem. We are out of most things, DS is poorly and I wanted to make biscuits but have no eggs.

Am off to google shortbread recipes.

How about this cookie recipe. No rolling out or cutting, but quick and easy:
4oz self-raising flour
4 oz oats
pinch of salt
3 oz sugar
4 oz butter
1 tablespoon golden syrup.

Melt the sugar, butter and golden syrup together. Mix in in the flour and oats.
Roll into balls, flatten onto a greased baking tray. Cook for 15 minutes at 170 C.
Leave to cool for a few minutes on the tray then transfer to a wire rack to crisp up a bit.

These are yummy, and you can add any old bits to them - raisins, chocolate, nuts, chopped dried fruit of any kind, seeds etc.

out come the MrsB Emergency Biscuits again:

1oz sugar
2oz butter or marg
3oz plain flour

cream butter and sugar, mix in flour, roll out, cut out, 10min 180ºC

tart up by adding raisins or choc chips etc, or ice afterwrads

Ineedsomesleep · 03/12/2009 12:19

Thanks Omicron and MrsB.

MrsBadger, are you following me around today?

PerArduaAdSolInvictus · 03/12/2009 12:23

If you've got any ground almonds, add half an ounce to MrsB's recipe, with a dash of almond essence and a few chopped up glacé cherries. Om nom nom...

MrsBadger · 03/12/2009 14:22

oh yes, absolutely

thanks everyone. we made shortbread and then painted them with food colouring which was much easier than on our usual cheese biscuits so turned into a double activity. We then made pasta necklace beads with the remaining food colouring, so a very productive rainy day chicken poxy morning. Off to thread pasta beads now - have been drying on radiator!

Will try those other recipes another time
