Sausage rolls

I put "sausage rolls" in the search thingy, and it gave me a recipe for some tray bake with cherries and marshmallows in, , so here I am, asking you lot!

What do I put in with the pork sausage meat to give it a bit of something different? A friend puts sundried tomatoes in, and some combo of herbs/spices. Can't copy that, as she will be eating them!

just sage and a grated onion in mine, with lovely crumbly flaky pastry... uuuum yum!

Fresh sage? Or dried? Salt & pepper?

nb i haven't actually done that, it's just what i would do if i ever felt i'd had enough of plain sausage rolls (not likely tbh). i'd mix the pickle in with the sausagemeat and put the cheese in the pastry

In Delia's Christmas book (not the new one) she has a lovely recipe for vegetarian sausage rolls, which involves cheese and herbs, I think. I'll post it if you want?

dried or fresh sage, whichever you have! I use a really good quality sausage meat which is pretty well seasoned all ready so don't ad any salt or pepper.
