Home made stuffing?

I normally buy packet mix but would like to try making my own for Christmas this year. Does anyone have a really good recipe?

Try the traditional forcemeat stuffing:
Sausage meat, onion, sage, breadcrumbs, beaten egg. Mix the whole lot and cook in oven for about 45-50 minutes. It's delicious.

AstronomyDomine would you mind posting the full recipe for forcemeat stuffing, I would love to give that a try. Thanks in advance
