puff pastry ideas??

I have this habit of buying ready made pastry and then forgetting about it....Most recent one is actually out of date but only by a week so am not too worried....
but i DOOOOO need to use, by, like, well, last week i suppose?!!

Suggestions for a quick and easy dinner tonight?

spread some pesto on it and top with roasted vegetables
OR
tomato sauce, tomatoes and cheese for a pizza type dish
OR
fill with mincemeat - either cook and fill and then bake or raw mixture (burger or meatball recipe)

and if you have some left over and hanker for dessert this is easy peasy.

Score a rectangle about 2 inches from the edge of the pastry, (so it's easier if it's square or rectangle). Prick the inner square/rectangle with a fork lots and lots.

Brush the outer edge with beaten egg, then bake in the oven until brown.

When cooled spread the middle with lemon curd, you can sprinkle over a little icing sugar if you want.

spread with thin layer passatta, add blobs of pesto and mozzerella. you could also add ham or other toppings. roll it up like a swiss roll. slice it up. bake it.
