Does anyone have a recipe for beetroot cake?

Inspired by the thread on courgette cake, I'm wondering if a pudding could be made with beetroot...?

cue Ds rescuing it from his lunchbox and devouring the lot.

Tis yummy.

75g cocoa
180g plain flour
2tsp baking powder
250g castor sugar
250g cooked beetroot
3 large eggs
200ml veg oil
vanilla essence or extract

cook beetroot then puree
add eggs and then oil
mix dry ingredients then add puree mixture
Bake at 180' for about 30 m ins

I like to coat with some chocolate or icing sugar

I like this recipe. You don't need to precook the beetroot [lazy], and it's quite tasty.
