organic veg box potato glut - suggestions please!

I've just started getting an organic veg box delivery and while everything else is getting enthusiastically used, I'm left with excess potatoes every week and I now have a glut - we're veggie and one of the dc doesn't like mashed or baked potato and we usually have rice, pasta, couscous rather than potato ... any suggestions as to what I can do with them all??

Add to soups?

Thinly sliced potatoes in a pyrex dish filled up with a not-too thick white sauce and cooked in the oven (a favourite here)?

Cottage pie?

Or ask for fewer tatties in the box?

Rosti, or potato and vegetable bake, or sautee potatoes, or a tortilla, or the best - pommes dauphinoise? Mine will eat all of the above, but also don't much go for mashed or baked potatoes.

thanks for suggestions - will give rosti a try tonight - the dc had a brief flirtation with spanish omelette but have now given it the thumbs down

We love a Delia recipe for potato boulangere, sliced pots, with sliced onions all layered up in a sauce/veggie stock. You leave it cooking for about an hour, it's lovely.

Tonight I will be frying boiled potato with onion and garlic, then adding cheese and egg. Looks terrible on the plate, but tastes yummy.

Can you take potatoes out of your veg box? Some schemes let you do that. In fact, the first one I used had 2 types of veg box: with or without potatoes.

We used to have the potato gult too - we now alternate a veg box with a fruit box so the potatoes last us two weeks.

I forgot to say that for the potato boulangere you put in rosemary too - this has inspired me to make a pot of it for tonight, my dh brought a load of potatoes back from the allotment yesterday!

mine's Abel & Cole - I get the impression that potatoes are a given ....

rosti went down brilliantly

boulangere sounds good

don't think they'd go for the messy but yummy fried thing I'm afraid

and yes, potato printing beckons ...
