Absolutely BEST recipe for mincemeat pies - who has it?

I am going to cheat and use the preprepared mincemeat, but what is the best kind of pastry to use?

I bloody love this recipe - I used it last year and had people texting me after our Xmas drinks to get the recipe. The pastry is more like shortbread in taste and texture than traditional pastry but is very moreish. Also puts up with being kneaded and generally re-worked in a way that normal pastry doesn't:

oooh, too late for today's mince pies but will try them next time

I had some problems today, they were a bit dry but with lots of cream were definitely enjoyable.
