I've made home made truffles!

I used a recipe off Delia's website, and changed it a bit....don't like dark chocolate for starters, or rum..... and they're very soft.
I left the mix to thicken in the fridge over night like it said, but they're too soft.
Have managed to mould into balls, but has anyone any ideas whats gone wrong?

I have made the Delia chocolate truffle recipe and they were lovely. I did use rum and dark chocolate though. Are you sure you followed the recipe? Correct measurements of cream etc? Maybe the chocolate you used was too high in fat? I think dark chocolate usually has a lower fat content.

Oh - that;s a shame. Suppose it does make sense. They do taste nice, but their texture is like the inside of a truffle if you know what I mean, like those love Lindt ones. I might try out the dark chocolate ones so that i can compare.
By the way, can you remember how you managed to roll them? This was very messy for me!

Can you roll them into balls (or shape using 2 teaspoons if they're too soft) and dip them in melted chocolate?

Try wetting your hands before rolling them.

Good idea Batman. I tried cold hands and dusting with coco powder.
I have 3 lots in the freezer now - milk, white and Irish Cream ( tried spelling Bailies and failed). hopefully, when I take them out I can eat them when still very, very cold!
