I always think tarts are nice - goats cheese and tomato? [but someone did tell me once that as a vegetarian it gets very boring getting a lot of goats cheese when you go out...]
Vegetarian curry/casserole - peppers, onions lightly fried with garlic and ginger. Cumin, coriander added, then fresh tomatoes, a little stock and some chickpeas? Not necessarily flashy, but potentially a little different?
Is pasta too boring? Pasta with roasted tomatoes, avocado and goats cheese or feta is lovely and looks very pretty.
Whole butternut, stuffed with rice/couscous, sage, ricotta, and topped with some parmesan before being put back in the oven. Serve with a good salad.
Roquefort and rocket and fig salad - drizzle with honey and a dressing made up of sherry/red wine vinegar and olive oil
Or what about vegetarian mezze? Homemade hoummous, tzatiki, baba ganoush etc with grilled/roasted vegetables and pita breads/regular breads for dipping and serving?
