Soak the liver in a bit of milk and remove the thick outer skin before frying ...

Serve with mash, bacon and a few fried onion rings ...

And flash fry it - hot pan, no more than a couple of minutes or it will get tough.

I have never done it before - how will I know if it has an outer skin on it?

also why soak it in milk? I have read to blanch it in boiling water - is this the same idea?

Either do it really quickly, or really slowly.

I find it is delicious if you put it in a cold pan with oil, switch the heat on to about 2 (on an electric hob) and leave it. Don't turn it up, and turn it over a few times throughout.

Makes it really soft.

I think the milk removes the bitterness ... I just follow my mum's cooking advice
