Quick meals for the evening

What would you suggest as quick healthy meals that take minimal prep for the evening, for 2 adults and an 18 month old?

DH is home a lot earlier than me and works part time, but he finds it v difficult to pop a meal on because he is worried about supervising ds and cooking at the same time from a safety aspect.

So either we need very easy meals (pop in a chicken and some baking potatoes and get something approaching dinner an hour and a half later) or I have to cook when I get home from work (pasta and pesto and a bit of thrown in veg).

We'd rather not go down the ready meals route. However, DH is not v confident in the kitchen and is looking as though he would like specific instructions from me rather than just be left to make something.

Does anyone have any constructive suggestions?

Omelettes, or eggs of any variety?
Make a casserole at the weekends and freeze half.
Make more rice than you need one night and have egg fried rice the next
Grilled salmon with noodles and stir fried veg
Roast a joint at the weekend and have it cold with chips and salad on a Monday
That's pretty much our family menu, there!

Chopsand potatoes with veg should not take more than 30 minutes.

Fish is quick, ditto eggs.

Get a slow cooker or a pressure cooker.

If you have a slow cooker you can put everything into the casserole dish in the morning and it will be ready for your evening meal.

If you have a pressure cooker you can do a casserole in 20 minutes.
