1 rabbit - jointed
1 large onion
1/2 a yellow pepper
1 pint of water
2 chicken or vegetable stock cubes
2 tablespoons of blackberry jam
2bayleaves
3 cloves of garlic
1 large leek
handful of chopped butternut squash
1/2 a cup of pearl barley

fry onions, pepper and rabbit in a pan. Mix the jam into the hot stock and use to deglaze pan. Dump all ingredients into a casserole pot, put lid on and bake at 160 for about 4.5 hours. Tell the kids it's chicken and enjoy!

PS discard the ribcage, it's not worth the bother.

You can use it in a stew as you would chicken pieces. Put it in a dish, add an onion, couple of carrots, couple of celery stick, a parsnip, couple of potatoes or handful of barley, chicken stock, parsley, bay leaf. Add dumplings towards the end of cooking.

I cook rabbit quite often and never used to tell the children what it was because it caused hysteria amongst my younger ones. They don't bother now, though.
