What can I cook my guests for dinner tonight that is uber simple but looks impressive??

I have a big work deadline and will also be looking after 22-MO DD in the v short time between finishing work and getting the food cooked this evening.

I need a starter and main for four people - and I'm pregnant so soft cheeses and cured meats etc are out!

Any ideas would be fab. Thanks v much in advance

this is a fantastic superquick meal. It does need cornflour added to thicken the sauce though. Maybe serve it with shop-bought mash if you are really pressed for time?

Thanks, libra - both sound great but I think I cooked them chicken last time so will go with the fish. I don't supppose you have any genius starter ideas as well?

Could just buy some fresh soup and nice bread I guess.

Thanks - fanjolina, not a bad idea re the shop-bought mash actually. They've just texted to ask if they can come at 6.30 instead!!

My quickest fish dish is pesto crusted salmon (although can be done with most fish)

Make breadcrubs, stir in pesto, put on fish, put fish in oven, done

Starter - prawn and mango salad with coriander?

Shred some lettuce finely, with rocket too if you have it.

Slice some mango, add it to the prawns, add a small amount of mayo and lemon and black pepper, mix it all up.

Spoon over the salad and garnish with finely chopped red peppers and fresh coriander leaves.

You can do it a couple of hours before and leave it in the fridge.

Looks lovely and tastes even better !

Why don't you just get a bunch of nibbly bits, olives, some nice bread, some nice meats (even though you can't eat them), then your not rushing around and can enjoy the evening, especially with them coming earlier.

lovebeingamummy - oh yes, I remember that dish, it's genius and looks good on the plate too. I think even with a toddler clinging to my ankles and guests to make smalltalk with I'll be able to manage that.
