Spinach on pizza

We have some spinach from our veg box which needs to beeaten. Was going to do pizzas tonight has anyone made a fliorentina style pizza at home (eg egg and spinach) do you cook the spinach first ? When do you add the egg. Any help greatly appretiated

Wilt then drain and chop the spinach first.

The egg needs to go on last, but whether you put it on before cooking or halfway through depends on how well done you want the egg.

when we do this i just rinse the spinach and take the stalks off - i don't chop it just scatter the leaves about.

egg goes on halfway through for a nice oozy yolk.

bit of parmesan on the egg and don't forgetthe garlic

I cook in first in a little olive oil.
