What to serve with chicken stuffed with mozzarella?

Friends coming over for dinner on Friday. I'm going to do chicken breasts stuffed with mozarella, sun dried tomato and basil.

I'm not sure what to serve with it though? My fave is roasted baby new potatoes but I think DH and friends may eb a bit sick of those as I do them all the time!

Also, do you think it needs some kind of sauce? Worried it may be a bit dry, but friends are fussy buggers rather unadventurous so can't do anyhting too avant-garde.

Any ideas welcome!

If you wrap the chicken in parma ham or pancetta, it will keep it really moist, so there will be no need for a sauce.

I'd serve it with a green salad, some green beans and - if you want a potato dish - perhaps potatoes dauphinoise? Or pommes boulangere if you want something lower in fat.

Thanks BIWI, I will be wrapping it in parma ham so hopefully should stay moist. Tempted by a change from potatoes- wondering if couscous would go?

sorry just saw no potaotes

roast some medatarian veg and fork them though some cuscus... add some parsley too... bit of olive oil, squeeze of lemon.
