Leftover porridge - any ideas?!

DH made the porridge this morning and did enough for 3, forgetting that dd being only 11 months counts for about 1/5 for porridge purposes. Is there anything I can do with half a pan of it (apart from use for building projects, the darn stuff seems to set harder than anything I've ever encountered )?

We do "fried mush" with it. Add butter and fry the porridge in a pan and then serve with honey or maple syrup. Yum!

Someone told me you can put it in muffins as well to make them really moist but I'm not sure how much you'd use.

Porridge fritters sounds good. My irish grandmother used to eat porridge all week (make a big vat on Monday) by the weekend it could be sliced and fried or baked and eaten with butter.

Bin is fine but I try not to waste anything. Bin smells sweeter and money goes further.
