tarragon has quite a strong aniseedy taste...very distinctive. Have you ever had bearnaise sauce? that's the herb in it. I would use thyme if you haven't got tarragon, but dried tarragon works very well indeed if you can nip down the shop.

chervil

chervil is lovely, but its quite hard to get hold off. Do you grow it, Tracey? I thinking of doing that next year...

dd1 is very welcome...how lovely that she is cooking!

Um, Pernod?

I vote for thyme too, goes nicely with chicken and is similar level of intensity. Do try tarragon some time tho, it's lurvely.

Madam - dd1 buys and cooks her own food, this is working well as she is learning to budget, make shopping lists and last the whole month.

She made chilli yesterday and frooze it in batches, today the chicken casserole is made with thyme and smell lovely, it is also going in the freezer in batches.

This month is the first since June that I think she may well have got it sussed and have enough food for over a month!
