Are they in papercases?

Are the cases oily on the second day?

minnietheminx007 · 26/10/2009 17:05

Nope, sorry.

I always thought this happened when there was too much butter in the cake mix. May be wrong though... Can't remember where I heard it

LadyGlencoraPalliser · 27/10/2009 00:17

Yup, too much butter.

This recipe makes 12 cupcakes and I have never had a problem with the cases coming away..

5oz butter or marg
5oz caster sugar
5oz self raising flour
3 eggs
1/2 teaspoon vanilla extract

Beat butter/marg with sugar until light and fluffy.

Add the eggs one at a time, beating well after each addition.

Sift in flour and mix thoroughly.

Bake for 20 mins at 160.

They are lovely, light and fluffy.

I always go with my Grandma's recipe for sponge/cupcakes - it's easy peasy and works every time.

Weigh 2-3 eggs. Weigh out same weight in SR flour, butter and sugar.

Cream butter and sugar, add eggs while beating well then add sifted flour and a drop of vanilla essence and mix thoroughly - cook until cake(s) are golden and spring back to the touch.

Done

Told this to a friend who was notoriously bad in the kitchen and she's forever baking cakes now

Brilliant, thanks for these, I shall give them a go, the recipe I was using was
110g butter
110g sr flour
110g suger
1tsp baking powder
2 eggs
1 tsp vanilla essence.
The recipe also said to just chuck everything in which I thought was odd as I had always creamed in butter and sugar in the past.....
I think today is a baking day

Those ingredients looks fine, I think the problem was probably not creaming the butter and sugar really well first.
My recipe, to add to the collection, involves weighing the eggs first and then using equal weights of butter, sugar and flour.

Just like my recipe LadyGlencora.

It's an oldie but a goodie
