DC have asked me to make them some toffee apples.

Does anyone have a foolproof recipe that has been tried and tested?

I made some a long time ago and the the toffee seemed to have a fudge like consistency and didn't harden.

Tana Ramsay recipe-

450g/1 lb demerara sugar
225ml/8fl oz water
1 tsp malt vinegar
4 tbsp golden syrup
50g/ 2 oz butter
12 wooden lolly sticks
12 apples

Dissolve sugar into water over moderate heat. when dissolved (approx 10 mins) stir in vinegar, syrup & butter, bring to boil. bubble gently for 15-20 mins until it resembles treacly syrup- test by dropping a little into abowl of water- if ready will form hard ball.

Push lolly stick into base of apple. Dip apple into hot toffee thenplace top side down onto lightly greased tray to cool & set.
