Pumpkin recipes please - pie, soup?

Inspired by ds's love of the Pumpkin Soup books, I attempted to emulate the cat, squirrel and duck. Unfortunately it was NOT the best you've ever tasted, it was vile. So now I have half a pumpkin and quite fancy a sweet pumpkin pie. Does anyone have a good recipe for such a pie, or a foolproof one for soup? Mine was sweated onions, cooked pumpkin, pureed with water and then cream stirred in at end, but it didn't really taste of anything.

Hopefully you have a pie pumpkin there or your pie will likely be vile as well. If you have already gutted and cooked the pumpkin you'll need to puree it then add 8oz sugar and a little cinnamon, clove, allspice, ginger and a dash of salt.Then 4 eggs and 16 oz evaporated milk. If you don't have the milk you can make some out of powdered. Cook for the first 15 minutes at 210 c then turn down to 175 c for 45-60 minutes.

Pumpkin soup needs another flavour like thyme and/or nutmeg. I put the chunks in raw with the sweated onions, cook for a bit then add stock, cook gently then puree carefully without turning it into wallpaper paste.

I too have made pumkin cake, it was ok.

Wallpaper paste is exactly what mine looked like. And tasted like, actually.

I am giong to try the pumkin carrot cake later, will let you know how it turns out. Shame I can't post you all a slice!

Another way to get flavour in pumpkin soup is to roast it in butter first with herbs/spices and then puree and add to stock. Roasting gives even watery pumpkins more flavour.

Update on pumpkin possibilities. I just held a dinner party and another family brought dessert. Everyone wanted the recipe, including me, for this pumpkin pie cake. You make pumpkin pie as you normally would for two pies and put it in a casserole dish. Then you sprinkle a yellow cake mix over the top of it followed by melted butter (6oz)and pecan pieces and bake as you normally would a pumpkin pie. It's fab!

How do I know if my pumpkins are pie pumpkins or not?

You might have to ask-but they are much smaller. Sometimes they are called sweet pumpkins or cheese pumpkins. You could also use a butternut squash.

But I've got 10 pumpkins that ds grew from the pumpkin plant he was given at school! I have no idea what sort they are - but I was brought up never to waste food so I've got to cook things with them. Oh bum. Oh well, I will waste some butter, flout, cream, sugar, eggs and nutmeg in order to make something inedible in order not to waste a pumpkin!

Well if they're quite large-suitable for carving with thick walls and rather hollow inside-I'd say they are jack-o-lantern pumpkins grown for their size. Something smaller and more solid is more apt to be a pie pumpkin. If you've got jack-o-lanterns you can increase the sugar by 20-25% and put them through the blender/food processor after roasting to help with the flavor and texture. We have always just roasted the seeds of the ones we carve.
