Chicken Breast - any recipes please? I want to try something nice and yum

When DH gets paid we've started getting a catering sized tray of chicken breasts from the meat cash and carry round the corner (rather than go to the supermarket and pay more) and I'm running out of ideas and usually end up with stir frys or pasta.

Any variations on the aforementioned will be appreciated also.

I have a trusty slow cooker too .

Make a slit in the breasts and stuff with a mix of butter, parsley, garlic (4 cloves, peeled and boiled in water for 8 mins), zest & juice of a lemon and a glug of olive oil. Marinade for at least a couple of hours.

Preheat over to 200c/600f/gas 6.

Add chopped onion, garlic and smoked paprika to a pan and fry in olive oil until softened but not coloured. Add sliced 280g jar of chargrilled peppers and their juices. Then add 8 chopped, deseeded toms, 1 tin chickpeas, a swig of white or red wine vinegar, 2 fresh green chillis and s&p. Stir, bring to boil and then simmer for half an hour.

Meanwhile put chicken onto a hot griddle, turning them for 10 mins until golden and lovely, then pop into over for 10 mins.

Service chickpea stew topped with chicken. Drizzle with olive oil and some basil leaves.

It's really delicious.

Shame about the skin, BUT you could use some ham or something that would crisp up and add a bit of salitiness and flavour to it. The best thing about chicken is its ability to take on any flavour at all, just depends what you like.

If you like salads also try a mix of spices (mainly cumin though and anything you might like with it!) then grill chicken, let cool. Make some couscous, add pomegranate,coriander or parsley, pinenuts - v middle eastern and very yummy, keep all cooking juices and use as dressing! You don't have to add the pomegranate but it makes it look vvvv pretty. I am shallow and love the pretty colours with food!

OMFG! Big love wee time.

I've got DH's bank card to go food shopping with tomorrow so I'll get as much as I can get to make the recipes on here.

And buy cake. Filled with cream.
