Delia's Christmas Cake

Can anyone who's made Delia's Christmas Cake tell me how tall the cake is in an 8in round cake tin. I've got the fruit soaking now and it looks far too big to go in my cake tin which is about 2 1/2 inches tall.

Do I have to nip out tomorrow and buy a new cake tin?

Ooooooh. I love the excitement of waiting for something to bake. I have a real job not to peek in all the time and see how its getting on. And from eating it all now and making another to replace it.

I bet he loved helping you. Shame that he put all the effort in and now he'll have to wait until Christmas to taste it. Did you let him lick the bowl? That's my favourite bit of making cakes

I need to work out when I'm going to make mine. I did Nigella's last year from the domestic goddess book, reducing the amount of marmelade and adding a bit of black treacle instead. It was very good if I do say so myself

I've got her Christmas book now and the recipe is a bit different so I don't know what to go with - hmmmm

Tried and tested vs unknown is always hard though isn't it.

I think I will do a side by side comparison of the recipes and then decide which ingredients I like the sound of best!

Fancying trying to make a Christmas pudding now too. Does anyone have a good recipe?

My nan has a great recipe. All I know is that it involves stout. It's a secret - I might try and get my paws on the recipe though because I fancy taking a swing at the pudding too!

I might wait a few weeks and do the pudding on stir-up Sunday.

Northern, Delia's pud recipe contains stout, it might be worth looking at that.
