Bacon Knuckle

Dp got a bacon knuckle yesterday from butcher as I wanted it for a bacon and lentil soup. However this one has so much meat on it it seems a waste just to use it for that. Ideally I'd like to use it for another meal and then uuse it up in the soup.

Any ideas for recipes (they can't have dairy in though I have dairy free butter stuff and milk).

I am really stuck as the only recipe I have using a bacon knuckle is the soup.

I don't know anything about bacon knuckle, but I imagine it's a bit like gammon? I'd just boil it with onions, cloves and carrots, then flake off the meat for one meal, like this, and then use the rest for soup.

I have put it in slow cooker and will pick off meat. The bone with a few bits on will do for the soup.

Will have a look at that recipe thanks

It was really cheap (£2.60) so may see if it's good for sandwiches as works out a lot cheaper than the ham I usually do. And there's plenty of meat on it.
