I've roasted a chicken now i need a chicken soup recipe please...

I tried this before and it was crap so please pass on your words of wisdom.

Remove any decent bits of chicken from the carcass and put to one side. Gently sautee a chopped onion, chopped celery and carrot in a little butter until soft but not browned. Add this to a large stock pot, with the bones/carcass of the chicken, add water , lid and simmer for a couple of hours. Drain (reserving the liquid obviously) and throw bones etc away. Now decide what kind of soup you want to make with the stock. For a basic left over soup I chop the left over chicken, dice potato, celery, carrots, green beans, onion and add this too the stock. Kids love it and it is a meal in a bowl.

Another one is lemon grass, with the chicken, a bit of chilli and some coconut milk.

Otherrwise you can use the stock for all manner of soups and the chicken for sandwiches, rissotto, curry etc.
