Hot Vegetarian Lunch

what can I do for lunch for my lovely vegetarian friend and 2 year old daughter? Last time I did pasta/pesto.

Preferably something hot that doesn't mean I have to spend hours in the kitchen - she'd be happy with sandwiches etc. but I'd like to get something warm on the go.

Any ideas?

Egg fried rice

Stir fry veggies with noodles

Carrot soup

Pitta breads with salad and some sort of warm cous cous, maybe with some feta cheese.

Omelette - either just a cheese omelette with salad, or a Spanish omelette/ fritatta type thing.

Baked potatoes with a choice of things to go in them or with them - baked beans, cheese, veggie sausages, salad and so on.

Might steer clear of the omelette though, Michel Roux Jr would banish me from the kitchen and use it to sole his shoes!

wraps with loads of fillings and everyone just makes their own.

Fillings could include:

cheeses

salad stuff

grapes

chickpeas, kidney beans etc

humous

olives

ciabatta toasted under the grill with goats cheese and cherry tomatoes for the adults and cheddar cheese for the kiddies

Aubergine and courgette bake:

1 large aubergine and 1 large courgette
Slice aubergines lengthways, and slice courgettes into chunky batons
Griddle aubergines till nicely soft and charred on both sides (will take a lot of olive oil) and fry courgettes till browned and softened; season both with salt and black pepper

Make tomato sauce - tin of tomatoes, fresh basil and 2-3 finely chopped cloves of garlic, salt and pepper. Bring to the boil and simmer until thick and reduced.

Layer aubergines and courgettes in an ovenproof dish, and ladle the sauce between each layer.

Top with sliced mozzarella and finely grated parmesan and bake until the cheese is browned a little - around 20 minutes in a hot oven.

It will be quite juice, so serve with French bread/crusty bread.
